It’s Lemon Thyme! :-)

I can’t believe I forgot to post this before now!   This homemade “pizzookie”, or skillet cookie was my birthday indulgence.  Warm, melty, chocolate chip cookie topped with scrumptious Breyer’s vanilla bean ice cream - oh, yummm!  Breyer’s is the best-tasting, closest to homemade ice cream I’ve had, for a store-bought ice cream.  Here’s to aging gracefully!

Mahi Mahi Fish Tacos!  Pin It

Yep, just like the restaurant, but even better!  For these, I grilled up some mahi mahi - but you could easily use a white fish (cod, tilapia, snapper), shark, swordfish, etc. I heated the corn tortillas (healthier than the flour tortillas) in a skillet.  Then loaded them with the grilled fish, drizzled with a little white sauce (sour cream with a generous amount of chili powder mixed in), shredded cabbage, fresh pico de gallo (diced tomatoes, onion, jalapeno, cilantro, salt & pepper), and sweet corn salsa from Trader Joe’s  - seriously, it’s the bomb!  Mr. Man had a little avocado on his. 
THEN we proceeded to devour them.  It wasn’t pretty.  But it sure was tasty!

This was an absolutely delicious dinner!  Having worked at a seafood restaurant for years, I can be a bit of a snob buying fish from a supermarket, but this was wonderful.  Thanks, Monique, over at Ambitious Kitchen for sharing a great meal!

So - don’t forget to allow time for the marinating - it’s scrumptious, and you want the salmon to have plenty of time getting to know all those flavors!  I did skip the honey - I think someone hid my honey bear.

Pin It The quinoa was amazing.  I had looked at 3 stores for coconut milk, and could only find coconut water.  So, I used a generous tablespoon of CocoLopez (for pina coladas) and skim milk in it’s stead.  It turned out jussst fine. And in my plating frenzy, I didn’t mix the pineapple in with the quinoa, and added it on top instead.  Of course, after the photoshoot, it all got mixed together.
